I've double-checked the site key and secret, and went through all of the options but I can't get it to work properly. When the checkbox is clicked, the animated circle appears but never completed - preventing the form from submitting (returning an error telling me to fill in the recaptcha field.

Hi Mark,
This information is not enough to allow us debug and help you. We need admin at least website URL, and then if it'll also be in-informative we'll ask for dashboard admin access. If you don't want us to check the problem directly on your live website, you can clone your Website or install a fresh WordPress in some subDomain or in some subDirectory and send admin login details.
