I noticed that first name and last name were not default fields so I added them. Is there away to get these entries to populate those fields in the WP User Personal Options, and perhaps give forum users a choice in how their name is displayed publicly?

I'm sorry but the new created fields are not synced with WP user native first/last names. wpForo allows users to manage the display name in My Profile > Account page.
