I'd like to know what is the content of each cookie that the plugin sets, does it contain personal information (e-mail address, IP address, name, etc) and whether this information is transferred to a third party.

Yes, it gets guest commenter Name/Email from cookie. This is a core WordPress function, this data collection is designed in WordPress and used for wpDiscuz too. Guest commenter should not fill Name and Email each time he/she post a new comment, it’s already filled from cookies.

So, I suppose that this information stays between the commenter and the WordPress website which has wpDiscuz installed and it is not transferred to any third parties?
wpDiscuz is a native comment system plugin, it doesn't have any 3rd party function and feature. All are stored and rendered on your server and database. Nothing is shared with 3rd party servers. If you use additional function on wpDiscuz you should check those separatly. For example Antispam plugins or Social Login plugins. We only support wpDiscuz plugin.
