You can change the color using CSS code. 

You can find the classes by pressing F12 on the browser and opening Chrome or Firefox Console, it'll help you easily write CSS rules you need to customize ((Note: The screenshots provided are examples; be sure to focus on the elements in the poll section).

Don't forget to delete the caches once you make changes.

The changing colors is pretty silly and after going to a lot of trouble to brand my sites the way I want to, and have the polls randomly display some not-so-attractive colors, it ruins what is supposed to be a clean & simple dark theme. Will you please consider updating this soon? To pay for an option that doesn't allow a simple customization seems a bit unreasonable, especially considering how robust wpForo is when it comes to customizations.
